Spread some enchilada sauce at the bottom of the glass pan.
Lay down a layer of tortillas. Leaving some gaps is okay.
Put down some black beans.
Place a layer of your cook ground meat.
Sprinkle a layer of mozzarella cheese.
Lay down another layer of tortillas.
Spread another layer of enchilada sauce
Continue this pattern until you reach the top of the pan. Make sure to end with a layer of cheese at the top. I always end with a layer of "Mexican Blend" cheese.
Stove Top Cooking:
Cover with foil and place in over for 45 minutes at 350*.
Remove foil from top and place back in over for 10 more minutes to crisp top layer of cheese. (if you prefer a soft layer of cheese on top, skip this step.)
