Banh Mi Sandwich

Pickled Veggies:

• Slice carrots and cucumbers into toothpick size pieces. Slice your jalapeños into thin rounds (remove the seeds if you choose).
• In a bowl add the carrots, white wine vinegar, rice vinegar, pinch of salt and a pinch of sugar. 
• You can add water or more vinegar as necessary to cover veggies completely. 
• Let this sit in the fridge for a minimum of 30 minutes. The longer it sits the better though!

The Meat:

• Mix olive oil, tamari, lime juice, garlic, ginger, and ground pepper together and let the meat marinade for a minimum of 15 minutes. 
• After marinating, pour meat and marinade in a sauce pan to cook. Cook the meat to a medium rare temperature.

Assembling The Sandwich

• On your baguette spread your layer of spic mayo. Add your cooked meat next. Place your pickled vegetables after that and top with the pickled jalapeños. THEN ENJOY!
